Red Ginger - Fresh Tropical Cuisine

5 things you want to know about Red Ginger but aren't quite sure who to ask:

1) The site of our restaurant is the old Paradise Hotel.  We grew up at the Paradise Hotel and we ate all of our meals at the hotel's restaurant, affectionately known as The Palm (before copyright laws existed in Belize).  Now, we have the privilege of operating Red Ginger on the same spot where The Palm stood.  And our little girl gets to eat many of her meals there, just like we did back in the day. 

2) Red Ginger is named after the beautiful flower native to Belize.  And the fresh red ginger flowers that you see in the restaurant are grown by our family on the Belize mainland.  That's our version of flower-farm to table. 

3) The chef, Jose Torres, started working at our restaurants as a dishwasher.  He eventually trained in the kitchen under Chris Aycock (of Blue Water Grill and most recently Yama in Vail, CO) and Andres Futo (formerly of Cacao in Coral Gables, FL), until taking over our kitchen in 2009 at the ripe old age of 24.  He's recently been joined in the kitchen by chef extraordinare Sylvia Eiley, who returned home to Belize after travelling the world as a chef on private luxury yachts.

4) Our dinner manager, Aaron Sutherland, started as a server at Blue Water Grill before becoming a manager at Red Ginger in 2010.  We think you'll like Aaron.  And, if you're a UFC fan or you like Tom Brady, we know you'll like him.  The breakfast and lunch manager, Enrique Luna, has been a fixture in the restaurant industry in San Pedro since dinosaurs roamed the island.  If you visited the island years ago, you might remember him from a certain resort down south that rhymes with Mictoria Mouse.  If you've come more recently, you know that he's the creator of the magical margaritas at Caliente.
